Soups and Stews

 

Nothing goes better with winter than a hot bowl of soup.  Just right for those cold days.  Some may even like to try some of the cold soup recipes for summer.
 

Rose's Corn Chowder

1 (2 inch) sq. bacon
1 lg. onion, chopped
2 med. potatoes, diced
2 c. chicken broth
1 can cream corn
1/4 tsp. pepper (white)
1/2 tsp. dried thyme or 1 tbsp. fresh
1 c. milk, evaporated milk or light cream
Paprika

 

Dice bacon, fry slowly in big pot. Remove, drain, reserve. Sauté onion in drippings. Add potatoes, broth, pepper and thyme. Simmer, covered for about 30 minutes, until potatoes are done. Stir in corn and milk, beat through. Taste for seasoning. Serve - sprinkle with paprika and bacon.
 

Hamburger Noodle Soup

1 lb. ground beef
1 onion
1 carrot
2 stalks celery
1 tsp. time
1 tbsp. parsley
1 oz. tomato puree
1 lb. can tomatoes
Noodles as wanted
Nutmeg
 

Combine meat and next five ingredients. Cook 25 to 30 minutes. Add tomato puree and tomatoes. Cook 10 minutes. Add noodles. Cook until soft. Sprinkle nutmeg on each serving. Homemade noodles are best.
