Canning and Preserving

 
 

All the work you do each summer in canning and preserving foods from the garden and friends, can now come back to you from your winters supply.  There are still many things that can be preserved this winter for use later in the year or during the summer.

Homemade Taco Sauce

12 each Canning tomatoes
1 cup Chopped green chili
1 teaspoon Cumin
1 each Small onion
1 teaspoon Salt
1 teaspoon Oregano

Dip tomatoes in boiling water, peel and chop. Chop small onions. Put tomato, onion and chili in 6 quart pan. Add seasonings and simmer for 1 1/2 hours. Put in canning jars. Bath in hot water bath for 30 min.

   

Green Tomato Mincemeat

1 1/2 pt. chopped tart apples
1 pt. green tomatoes, chopped
2 tsp. cinnamon
1 tsp. salt
1 tsp. allspice
1 tsp. cloves
1 lb. raisins, chopped
1/4 c. vinegar
1 c. suet

 

Peel and chop apples, mix all ingredients together. Bring to rapid boil and simmer until thick. Pour into sterilized jars, wipe tops and seal, screwing band firmly tight. Process in boiling water bath for 25 minutes.
